One-Minute Egg Mug

A warm, nutritious breakfast you can make in under 2 minutes: whisk eggs with spinach and diced bell pepper (or chopped seaweed/turkey and a little cheese) in a microwave‑safe mug or ramekin, then microwave ~60–90 seconds until set. Fast, customizable, and easy for kids to eat.

Ingredients  

- 2 large eggs  

- 1 tbsp milk

- 1 tsp extra‑virgin olive oil (or cooking spray)  

- 1–2 tbsp chopped veggies (spinach, bell pepper, mushrooms, cooked broccoli)  

- Salt & pepper to taste  

- Optional: 1–2 tbsp shredded cheese or 1–2 tbsp cooked diced turkey/chicken

Instructions

1. Lightly oil a microwave‑safe mug or small ramekin with EVOO or cooking spray.  

2. Crack eggs into the mug, add milk, salt & pepper; whisk until blended.  

3. Stir in veggies (and optional cheese or cooked meat).  

4. Microwave on high for 60 seconds, stir, then microwave in 10–15 second bursts until eggs are set (total ~75–90 sec depending on microwave).  

5. Let sit 1 minute, then serve (flip onto toast or eat from the mug).

Makes 1 serving.
