Everyday PrOATS

Ingredients

1/2 c steel cut oats 

2 c water 

3 eggs

2 tbsp ground flaxseed 

1 tbsp chia seeds

2 tsp ground cinnamon 

1 tsp vanilla extract 

Fruit (frozen or fresh)  

Topping ideas: hemp seeds, pumpkin seeds, sliced almonds, chopped walnuts, pecans, hazelnuts, dried berries, dates, coconut shreds, banana slices, fresh seasonal fruits 


Instructions

Pour water, oats, cinnamon into slower-cooker and set on low for 8 hours overnight 😴 OR 4 hours on high setting. 

Prep glass containers with fruit and set them in the fridge. *I usually fill ~1/3 of a mason jar and let frozen fruit thaw overnight

When the oats are close to done, turn up to high setting [if not already] then stir in eggs quickly. *I use 3 whites, but whole eggs work too. they just taste more eggy. The oats should get nice and fluffy! 

Stir in ground flaxseed, chia seeds and vanilla extract. 

Let the oats cook for a few more minutes while you retrieve prepped containers from the fridge.

Evenly portion out into oats into each. 

Seal them up and pop them back in the fridge until you’re ready to enjoy.

I love hot oats, so I’ll usually warm them up in the microwave for a minute, stir in almond milk and top it off with an assortment of toppings... currently loving hempseed, fresh figs, goji berries and coconut shreds.
