Wild Blueberry Muffins [no added sugar]

These Wild Blueberry Muffins are a huge hit in my house—I bake a batch almost every other week! Wild blueberries are smaller size, firmer texture, and lower water content help them hold their shape perfectly during baking. Beyond that, these muffins aren't just delicious; they're made with whole grains, packed with fiber, and sweetened without added sugar, making them a nutritious powerhouse!

Ingredients

  • 1 cup banana, mashed

  • 1 egg

  • 1 tbsp olive oil

  • 1 cup milk

  • 2 tsp vanilla extract

  • 1 cup whole wheat flour

  • 1 cup old fashioned oats

  • 1/4 cup ground flax seed

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 2/3 cup frozen wild blueberries

Instructions

  1. Preheat oven to 375 degrees.

  2. In a large bowl, combine mashed banana, egg, oil, milk and vanilla extract.

  3. Then add in flour, oats, ground flaxseed, cinnamon, baking powder and baking soda, and mix well.

  4. Fold in frozen wild blueberries into batter.

  5. Line a muffin pan and fill each cup with batter 2/3 full.

  6. Bake for 17 minutes.

Makes 1 dozen muffins.
