English Muffin Mini Pizzas

Kid‑friendly mini pizzas that pair whole‑grain carbs, protein, and healthy fat for a balanced breakfast or snack. Quick to assemble, they deliver steady energy, calcium for growing bones, and a serving of veggies when topped with colorful produce.

Ingredients (makes 2)  

- 1 whole‑grain English muffin, split  

- ⅓ cup marinara sauce (divided)  

- ⅔ cup shredded part‑skim mozzarella (divided)  

- 1/2 cup prewashed baby spinach or 1/4 cup diced bell pepper or sliced mushrooms (mix & match)  

- Optional: pinch dried oregano or basil

Instructions 

1. Preheat broiler (or toaster oven). Toast English muffin lightly.  

2. Spoon marinara over each muffin half.  

3. Top with spinach/bell pepper/mushrooms and sprinkle mozzarella evenly.  

4. Broil 2-3 minutes until cheese melts and edges brown.  

5. Let pizzas cool for 1 minute and serve.

Makes 2 mini pizzas.
