Ingredients
4 cups walnuts
1 tbsp extra‑virgin olive oil
2 tbsp honey or maple syrup
(Optional) 1 tbsp cane sugar for extra sweetness
1 tsp vanilla extract
Chai spice blend
3 tbsp ground cinnamon
1 tbsp ground cardamom
1 tbsp ground ginger
1/2 tbsp ground cloves
1/2 tbsp ground nutmeg
1/2 tbsp ground allspice
Instructions
Preheat oven to 300°F (150°C). Line a baking sheet with parchment.
In a large bowl, toss walnuts with olive oil, honey (or maple), and vanilla until lightly coated. If using, sprinkle cane sugar and toss to combine.
Sprinkle about 1 tbsp of the chai spice blend over the walnuts and toss to coat evenly (use more or less to taste).
Spread walnuts in a single layer on the prepared baking sheet.
Bake 10 minutes, stir/flip nuts, then bake another 10 minutes (total ~20 minutes). Watch closely near the end to avoid burning.
Remove from oven and let cool completely—the nuts will crisp as they cool. Store in an airtight container at room temperature for up to 2 weeks.
