Pumpkin Cranberry Loaf

Ingredients

2 eggs (for vegan, sub with flax eggs = 2 tbsp ground flaxseed + 5 tbsp water) 

1 c mashed ripe banana (approx 3 medium bananas)

3/4 c pureed pumpkin

1/4 c olive oil

1/4 c maple syrup

1 1/4 c whole wheat flour

1 c whole rolled oats 

1/2 tbsp ground cinnamon

1 tbsp pumpkin spice 

2 tsp baking powder 

1/2 tsp salt

1/2 c dried cranberries (Made by Nature) 

1/4 c pepitas 


Instructions

Preheat oven to 350F.

Line loaf pan with parchment paper or lightly brush with olive oil. 

Combine egg, mashed banana, pumpkin purée, olive oil, maple syrup in a bowl, mix well until smooth.

Add in flour, oats, pumpkin spice, cinnamon, baking powder & salt, and mix well until the batter is clump-free.

Stir in dried cranberries.

Fill loaf pan with batter.

Sprinkle pepitas over the top. 

Bake for 50ish min. Check by inserting a toothpick into the center of a muffin to see if it comes out clean.
