Pumpkin Spice Chocolate Chip Pancakes



1/2 c pumpkin purée
1/2 ripe banana
1 egg

1/3 c unsweetened vanilla almond milk
1/3 c oats 

1/2 tbsp pumpkin spice 
1 tsp baking powder

1/2 tsp vanilla extract
¼ tsp salt

Optional- 1 scoop protein powder (I like Sun Warrior plant based protein in Natural flavor)

Set aside ~1 cup chocolate chips for topping, along with your favorite fruit, nut butter and/or yogurt


To make the batter, combine all ingredients (except chocolate chips) in a blender. 

Heat up pan or skillet to medium heat and lightly coat with oil (I like to use unrefined coconut oil for flavor).

Scoop 1/3 c of pancake batter and pour onto pan. Evenly sprinkle chocolate chips on to pancakes. 

Cook until you see pancake batter bubbles then flip! 

Cook for another 3-4 min until lightly golden brown on both sides.

Top off with your favorite yogurt, more chocolate chips, nut butter and fresh fruit!

Makes approximately six mini pancakes.
